From Ted: While in Portland, Maine on assignment for Boho magazine I had the opportunity to photograph Chef Nicholas Nappi of the restaurant Local 188. Not only is Chef Nappi a talented Chef, this Chef de Cuisine cures his own meat. In this photo Chef Nappi poses with curing prosciutto (still wrapped in cheese cloth). This is one example of how the restaurant uses the freshest ingredients (they purchase most of their ingredients from local farmers and fisherman) to prepare amazing food. I urge anyone who is in the Portland area to check out this local eatery.
